White Tea

The least processed tea there is, and the most delicate. White tea is picked young and barely oxidised, which leaves it soft, subtly sweet and low in caffeine — closer to a light infusion than a strong brew.

How to brew it

175–185°F, 3–5 minutes. Use a little more leaf than you would for black tea and cooler water than feels right. White tea is forgiving on time and unforgiving on heat.

Questions

How much caffeine? Low — typically 15–30 mg per cup, less than green tea.

Why does it taste so faint? That is the point, but if it disappears entirely, add leaf rather than heat.
